Anche i ravioli dolci come le bugie sono tipici di carnevale: utilizzate la pasta per le bugie per fare

dei veri e propri ravioli il cui ripieno sara costituito da marmellata ( pesca, prugna, abicocca ).

I ravioli vanno fritti in olio e strutto;unica avvertenza è che la pasta delle bugie deve contenere una

quantità di lievito minima, sufficiente per dare croccantezza alla pasta ma insufficiente per fare le bolle.

You mix soft wheat flour with egg, butter, sugar and a very little baking powder to obtain the pastry and

you roll the pastry; you cut two inches side squares of the rolled pastry and on the centre of the square

you put a little jam ( peach, plum, apricot ). Now you cover every square and jam by an other square

pressing together the two squares along the perimeter. You fry the Ravioli Dolci in oil.
